Mung Beans, Peppers, Avocados, and Garlic

Mung Bean Experiment #1
Ingredients:

  • Mung Beans cooked, drained, unsalted approx. 1 cup dry
  • 1/2 avocado, could use more
  • red bell pepper
  • green bell pepper
  • a little bit of pepper
  • salt to taste
  • 1 onion
  • 3 to 4 cloves of garlic
  • parsley
Sautee mung beans with olive oil and onion, make paste with avocado, add rest of ingredients

also: Mungo paste to put on crispbread? Mashed with avocado and garlic/ onion?
