Eggs, Spinach, and Tomahto

Spinach Leaves
Optional Deli Chicken or Turkey Slices, cut into squares
Little bit of pepper

Start by making eggs, scrambled, add in turkey, and spinach, and keep on pan until leaves "shrink." Add tomatoes and keep mixing until eggs start browning and tomato liquid evaporates from the pan.

Can also be made into omelet

Grilled Eggplant Round One Roasted

Eggplant, washed, salted, drained, and patted dry.
Olive Oil
Fresh Thyme

Place medium thick eggplant slices on baking sheet covered in aluminum and brushed with olive oil. Brush the tops of the eggplant with olive oil as well, and squeeze lemon juice on as well. Lastly place fresh thyme on top of each slice, and stick in over on high heat. When tops start to brown, take out of oven, turn eggplant slices over, add more lemon, and then place back in oven until the other side starts to brown as well. Take out of oven and serve with meat, or other vegetables

Lemon Pepper Chicken Medley (and first cauliflower "rice" attempt)


4 Chicken Breasts
Ground Pepper (lemon pepper if available)
5 tomatoes
3 green bell peppers
3 smaller onions or two medium,
two lemons
olive oil

Cube the chicken breasts, and in a bowl, squeeze two lemons onto chicken and add salt (~2 tsp) and pepper (grind it if possible). Set aside and let marinate. The longer the better. Meanwhile, start to chop vegetables. On a pan, start to sautee chopped onions with olive oil. Add chicken and cook until it is browned around the edges, and/or until excess water from the pan evaporates. Taste and grind more pepper onto pan if necessary. Mix in peppers, cook for about another 5 mins on medium heat, and then stir in tomatoes over low heat for about another 3. Serve over cauliflower (see below)

For Cauliflower:
Boil a head of cauliflower in salt water until it is still firm yet able to be smashed. smash with a fork until it literally falls apart. Then serve the mix over this new "rice" substitute/side. No additional flavoring necessary because of above mix

Egg, Cauliflower, Onion, and Cheese Hash

Original Recipe

1 Onion
about 2 cups cauliflower, cooked, mashed
Mostly egg whites, about 5
Gouda cheese (optional)

Mix chopped onions with olive oil on pan, then add eggs, scramble, and add cauliflower and cheese at the end.

Buckwheat, meat, steamed vegetables, garlic

Buckwheat Recipe #1

  • approx 1.5 cups cooked buckwheat (pohanka)
  • 1 can canned peas
  • 1 can canned corn
  • 2 cups cherry tomatoes, halved or quartered
  • bits of seasoned (gyros, italian) chicken breast/pork
  • cloves of garlic
  • onion for sauteeing
warm up cooked meat (previously baked/grilled) with onion and some olive oil (1tbsp) and then mix in all other ingredients until warm.

Mung Beans, Peppers, Avocados, and Garlic

Mung Bean Experiment #1

  • Mung Beans cooked, drained, unsalted approx. 1 cup dry
  • 1/2 avocado, could use more
  • red bell pepper
  • green bell pepper
  • a little bit of pepper
  • salt to taste
  • 1 onion
  • 3 to 4 cloves of garlic
  • parsley
Sautee mung beans with olive oil and onion, make paste with avocado, add rest of ingredients

also: Mungo paste to put on crispbread? Mashed with avocado and garlic/ onion?

Experiments with Mungo- Mix #2

  •  Mung beans (cooked and drained/slightly mashed)
  • Chives/onion stalks
  • Green pepper (two smaller or one large)
  • Salt


  •  two triangles of non fat plain/ herb laughing cow cheese
  • garlic/seasoning      
Sauteed only with water/beans already had a little olive oil on them from batch before
